Ingredients:
12 fresh sweetcorn (on the cob of course), 1 onion, 1 red pepper, 3 teaspoons of sugar, 1/2 cup of oil (vegetable?), 1 teaspoon paprika, salt & pepper.
Cut onion/pepper into small pieces, sweat onion and then add peppers/salt etc – all the rest but finally the sweetcorn (cooked, off the cob now please). Add some cheese if you like…recommended…I’d grate some or roughly chop and chuck in.
Place the mush in the centre of sweetcorn leaves (the leaves of the 12 cobs you prepared earlier). Wrap up the humita and tie – put this parcel of yumminess in water and poach to heat.
Add spices and salt/pepper etc to taste.
